Harvested September 12th and 14th. 100% whole cluster direct to press. Cold-settled, racked, barrel-fermented with native yeasts. Bottled unfined and unfiltered.
Notes of jasmine and lemon oil jump out of the glass with a hint of passion fruit not far behind. On the palate, the wine reveals a lovely, lemon curd-like texture that follows through to a chalky, mineral-driven finish.
Elevage: Aged 12 months sur lie in neutral French oak barrels. Racked, and aged another six months in a stainless steel tank.
