Harvested September 12th and 14th. 100% whole cluster direct to press. Cold-settled, racked, barrel-fermented with native yeasts. Bottled unfined and unfiltered.
Tropical fruit notes dominate the nose, namely ripe pineapple, kiwi, and a hint of coconut. On the palate, the oak notes reveal themselves and marry with the pineapple to create a grilled pineapple flavor, with the slightest bit of caramelization. Slate and wet rocks on the finish help to bring the wine back from the brink and the strong acidity maintains its linear dynamic and leaves you wanting for that next sip. The wine has great tension and complexity to it; it will reward those with patience.
Elevage: Aged 12 months sur lie in French oak barrels; 20% new, 80% neutral. Racked, and aged another six months in a stainless steel tank.
