Harvested September 20th. Light foot-treading prior to pressing. Cold-settled, racked, and barrel-fermented with native yeasts. Bottled unfined and unfiltered.
A bit of flinty reduction on the nose precedes notes of citrus zest, particularly grapefruit and lime. There is also a floral note of honeysuckle on the back end. On the palate, the wine opens up to reveal a pithy texture that marries with the citrus aromas. Nice length as the reduction returns a touch on the finish with some notes of lemon cream.
Elevage: Aged 12 months sur lie in neutral French oak barrels and stainless steel drums. Racked, and aged another 6 months in a stainless steel tank.
